They're brilliant green early in the season, with a veined appearance on the skin, and they're firm and acidic. They're best used in cooking, especially to produce gooseberry fool, a traditional English dessert. Later on, softer, sweeter types, frequently yellow or red in colour, become available, which are best eaten uncooked. |
