Salad Nicoise is a French salad that is similar to our American Cobb salad, except instead of chicken, bacon, and avocado, it has tuna, green beans, and potatoes. Originally, the Nicoise salad consisted solely of fresh vegetables, with shallots, artichoke hearts, and red peppers added later. Boiled potatoes and other cooked vegetables were severely forbidden, with Nice people preferring to eat their Nicoise salad raw. |
